It's a hot summer evening and you're not sure what you're craving for dinner? Try this quick and simple recipe for ceviche using our fresh, local black cod!
Ingredients
1 fillet fresh local black cod (2.5 lbs)
3/4 cup fresh lime juice
1 cup fresh lemon juice
1/2 cup freshly chopped cilantro
1 cup thinly sliced red onion
1/4 cup fresh scallions
1/4 cup chopped tomatoes
a couple pinches of salt and pepper to taste
Preparation
Pour lime and lemon juices into a big bowl.
Add cilantro, onions, scallions, and tomatoes.
Add salt and pepper to taste and set bowl aside.
Clean and slice your black cod fillet as shown in the pictures.
Add sliced pieces of black cod to the bowl of ingredients.
Add a pinch more of salt and pepper and combine all the ingredients.
Let sit in the fridge for at least 30 minutes or up to 2 hours.
Serve with fresh guacamole and tortilla chips. Pour a glass of verdelho and enjoy!
